Cucumbers are in the same plant family as squash, pumpkin, and watermelon.  Like watermelon, cucumbers are made up of mostly (95 percent) water, which means they can help you stay hydrated.

However, there’s reason to eat cucumbers all year long. With vitamin K, B vitamins, copper, potassium, vitamin C, and manganese, cucumbers can help you to avoid nutrient deficiencies that are widespread among those eating a typical American diet.

1. Protect Your Brain

Cucumbers contain an anti-inflammatory flavonol called fisetin that appears to play an important role in brain health. In addition to improving your memory and protecting your nerve cells from age-related decline, fisetin has been found to prevent progressive memory and learning impairments in mice with Alzheimer’s disease.

2. Reduce Your Risk of Cancer

Cucumbers contain polyphenols called lignans, which may help to lower your risk of breast, uterine, ovarian, and prostate cancers. They also contain phytonutrients called cucurbitacins, which also have anti-cancer properties. According to the George Mateljan Foundation:

Cucumbers contain numerous antioxidants, including the well-known vitamin C and beta-carotene. They also contain antioxidant flavonoids, such as quercetin, apigenin, luteolin, and kaempferol, which provide additional benefits.

For instance, quercetin is an antioxidant that many believe prevents histamine release—making quercetin-rich foods “natural antihistamines.” Kaempferol, meanwhile, may help fight cancer and lower your risk of chronic diseases including heart disease.

5. Freshen Your Breath

Placing a cucumber slice on the roof of your mouth may help to rid your mouth of odor-causing bacteria. According to the principles of Ayurveda, eating cucumbers may also help to release excess heat in your stomach, which is said to be a primary cause of bad breath.

6. Manage Stress

Cucumbers contain multiple B vitamins, including vitamin B1, vitamin B5, and vitamin B7 (biotin). B vitamins are known to help ease feelings of anxiety and buffer some of the damaging effects of stress.

7. Support Your Digestive Health

Cucumbers are rich in two of the most basic elements needed for healthy digestion: water and fiber. If you struggle with acid reflux, you should know that drinking water can help suppress acute symptoms of acid reflux by temporarily raising stomach pH; it’s possible that water-rich cucumbers may have a similar effect.

Cucumber skins contain insoluble fiber, which helps add bulk to your stool. This helps food to move through your digestive tract more quickly for healthy elimination.

8. Maintain a Healthy Weight

Cucumbers are very low in calories, yet they make a filling snack (one cup of sliced cucumber contains just 16 calories). The soluble fiber in cucumbers dissolves into a gel-like texture in your gut, helping to slow down your digestion. This helps you to feel full longer and is one reason why fiber-rich foods may help with weight control.

9. Support Heart Health

Cucumbers contain potassium, which is associated with lower blood pressure levels. A proper balance of potassium both inside and outside your cells is crucial for your body to function properly.

As an electrolyte, potassium is a positive charged ion that must maintain a certain concentration (about 30 times higher inside than outside your cells) in order to carry out its functions, which includes interacting with sodium to help control nerve impulse transmission, muscle contraction, and heart function.

Organic Cucumbers Are Worth It

If you’re wondering whether you should choose organic cucumbers over conventionally grown varieties, I’d suggest organic. Cucumbers were ranked the 12th most contaminated food and the second in cancer risk due to their pesticide content, according to the Environmental Working Group (EWG).

Further, cucumbers are often waxed after harvest to withstand the long journey to market unscarred and to protect against the many hands that touch it. While the wax is supposed to be food-grade and safe, there are different types used:

  • Carnauba wax (from the carnauba palm tree)
  • Beeswax
  • Shellac (from the lac beetle)
  • Petroleum-based waxes

The natural waxes are far preferable to the petroleum-based waxes, which may contain solvent residues or wood rosins. Produce coated with wax is not labeled as such, but organic produce will not contain petroleum-based wax coatings (although it may contain carnauba wax or insect shellac).

The other potential issue is that wax seals in pesticide residues and debris, making them even more difficult to remove with just water. To reach the contaminants buried beneath the surface of your vegetables and fruits, you need a cleanser that also removes the wax, which is what a fruit and vegetable wash does. You could also peel the cucumber, but that is one of the most nutrient-dense parts of the cucumber (the other is the seeds), so it’s better to consume it if you can.

What Else Are Cucumbers Good For?

Flavonoids and tannins in cucumbers have been found to have both free-radical scavenging and pain-relieving effects, while it has a number of traditional folk uses as well. As written in the Journal of Young PharmacistsTraditionally, this plant is used for headaches; the seeds are cooling and diuretic, the fruit juice of this plant is used as a nutritive and as a demulcent in anti-acne lotions.”

As the fourth-most widely cultivated “vegetable” in the world (cucumbers are technically a fruit), cucumbers are widely available, but seek to get them from a local farmer’s market if you can. Even better, cucumbers are very easy to grow, even if you only have access to a patio. They thrive in containers (provide they have somewhere to climb on) and produce ample produce from a small number of plants, so you could try your hand at growing them yourself.

For many years Ben Stein has written a biweekly column called ”Monday Night At Morton’s.”  (Morton’s is a famous chain of Steakhouses known to be frequented by movie stars and famous people from around the globe.)  Now, Ben is terminating the column to move on to other things in his life.  Reading his final column is worth a few minutes of your time.

How Can Someone Who Lives in Insane Luxury Be a Star in Today’s World?

As I begin to write this, I ‘slug’ it, as we writers say, which means I put a heading on top of the document to identify it. This heading is ‘eonline FINAL,’ and it gives me a shiver to write it.  I have been doing this column for so long that I cannot even  recall when I started. I loved writing this column so much for so long I came to believe it would never end.

It worked well for a long time, but gradually, my changing as a person and the world’s change have overtaken it.  On a small scale, Morton’s, while better than ever, no longer attracts as many stars as it used to. It still brings in the rich people in droves and definitely some stars. I saw Samuel L. Jackson there a few days ago, and we had a nice visit, and right before that, I saw and had a splendid talk with Warren Beatty in an elevator, in which we agreed that Splendor in the Grass was a super movie. But Morton’s is not the star galaxy it once was, though it probably will be again.

Beyond that, a bigger change has happened..?  I no longer think Hollywood stars are terribly important. They are uniformly pleasant, friendly people, and they treat me better than I deserve to be treated. But a man or woman who makes a huge wage for memorizing lines and reciting them in front of a camera is no longer my idea of a shining star we should all look up to.

How can a man or woman who makes an eight-figure wage and lives in insane luxury really be a star in today’s world, if by a ‘star’ we mean someone bright and powerful and attractive as a role model?  Real stars are not riding around in the backs of limousines or in Porsches or getting trained in yoga or Pilates and eating only raw fruit while they have Vietnamese girls do their nails.

They can be  interesting, nice people, but they are not heroes to me any longer.  A real star is the soldier of the 4th Infantry Division who poked  his head into a hole on a farm near Tikrit , Iraq .  He could have been met by a bomb or a hail of AK-47 bullets.  Instead, he faced an abject Saddam Hussein and the gratitude of all of the decent people of the world.

A real star is the U.S. soldier who was sent to disarm a bomb next to a road north of Baghdad .  He approached it, and the bomb went off and killed him.

A real star, the kind who haunts my memory night and day, is the U.S. soldier in Baghdad who saw a little girl playing with a piece of unexploded ordnance on a street near where he was guarding a station.  He pushed her aside and threw himself on it just as it exploded.  He left a family desolate in California and a little girl alive in Baghdad ..

The stars who deserve media attention are not the ones who have lavish weddings on TV but the ones who patrol the streets of Mosul even after two of their buddies were murdered and their bodies battered and stripped for the sin of trying to protect Iraqis from terrorists.

We put couples with incomes of $100 million a year on the covers of our magazines.  The  noncoms and officers who barely scrape by on military pay but stand on guard in Afghanistan and Iraq and on ships and in submarines and near the Arctic Circle are anonymous as they live and die.

I am no longer comfortable being a part of the system that has such poor values, and I  do not want to perpetuate those values by pretending that who is eating at Morton’s is a big subject.

There are plenty of other stars in the American firmament…the policemen and women who go off on patrol in South Central and have no idea if they will return alive; the orderlies and paramedics who bring in people who have been in terrible accidents and prepare them for surgery; the teachers and nurses who throw their whole spirits into caring for autistic children; the kind men and women who work in hospices and in cancer wards.

Think of each and every fireman who was running up the stairs at the World Trade Center as the towers began to collapse. Now you have my idea of a real hero.

I came to realize that life lived to help others is the only one that matters. This is my highest and best use as a human.  I can put it another way. Years ago, I realized I could never be as great an actor as Olivier or as good a comic as Steve Martin or  Martin Mull or Fred Willard–or as good an economist as Samuelson or Friedman or as good a writer as Fitzgerald.  Or even remotely close to any of them.

But, I could be a devoted father to my son, husband to my wife and, above all, a good son to the parents who had done so much for me.  This came to be my main task in life.  I did it moderately well with my son, pretty well with my wife and well indeed with my parents (with my sister’s help).  I cared for and paid attention to them in their declining years.  I stayed with my father as he got sick, went into extremis and then into a coma and then entered immortality with my sister and me reading him the Psalms.

This was the only point at which my life touched the lives of the soldiers in Iraq or the firefighters in New York …  I came to realize that life lived to help others is the only one that matters and that it is my duty, in return for the lavish life God has devolved upon me, to help others He has placed in my path. This is my highest and best use as a human.

Faith is not believing that God can.  It is knowing that God will.

Environmental Causes of Disease? Simple Ways To Eliminate Pesticide/Toxins from Your Body!

Environmental causes of disease.

One of the primary perpetrators? Pesticides. Pesticides are continuously used in today’s farming methods. With the thousands of pesticides in use today, it’s easy to think there’s nothing you can do to safeguard yourself. But a study conducted at Emory University in 2008 paints a much more positive picture.

Researchers recruited Seattle-area school children for a year-long study.1 The study looked at the role of dietary produce in pesticide exposure. When the study began, the children were eating traditionally grown fruits and vegetables. Based on urine samples, all the children had considerable levels of one type of pesticide, organophosphorus pesticides (OP). Researchers chose to look at OPs because they’re so extensively used today.

During the course of the experiment, the children were given organic produce for one to two weeks instead. After eating organic instead of conventional produce for just five days, the results were spectacular. There were no detectible residues in the children’s urine. When they changed back to conventional produce, OP levels rose again. The switch was repeated several times during the year. The results were consistent; after just a few days of consuming organic instead of traditional fruits and vegetables, pesticide levels were no longer detectable.

And that was just one supposedly “green” product. I haven’t even touched on all the traditional cleaners out there that are NOT considered “green”. There are health solutions to better, safer products than the so called “traditional” types of household cleaners.

One thing is apparent. We just are not aware enough concerning the health problems of the countless amounts of chemicals in extensive use today. Here’s why:

Over 80,000 artificial chemicals are approved to be used in the united states. Items include pesticides, fertilizers, plastics, paints, coatings, fire retardants, and also oil dispersants (Gulf oil spill, anyone?).

Just a few hundred of the 80,000 chemicals are actually tested for safety.

Numerous chemicals used today are known and suspected carcinogens. Carcinogen means cancer causing.

Even with this identified poisoning, the vast majority of chemicals remain unregulated.

Chemicals generally are studied for safety individually. This tells us nothing at all about the harm to health that may result from being exposed to multiple chemicals at once.

Additionally, single chemical testing doesn’t represent reality. All of us are exposed to dozens, and even hundreds, of chemicals at a time.

What little regulating oversight that does exist for these chemicals uses the platform that chemicals are safe unless proven otherwise. This is one time when “innocent until proven guilty” is not a wise strategy.

Exposure to chemicals while pregnant and childhood is extremely damaging to health.

Unfortunately, over 300 chemicals is found in the umbilical cord blood of newborn babies. We are all “pre-contaminated.”

Simple measures, Big Payoff

Hence the cat is out of the bag. We are all subjected to countless potentially toxic chemicals from the day we are conceived to the day we die. There is some good news in this otherwise grim picture. Based on the PCP report1, several simple, but effective measures can significantly reduce our contact with synthetic chemicals along with other environmental hazards.

Whenever possible, eat foods grown without fertilizers, pesticides, and growth hormones the vast majority of time.

Store drinking water in stainless steel or bisphenol-A (BPA) free containers.

Microwave foods only in ceramic or glass containers, not plastic. Do not put very hot foods into plastic containers.

Choose foods, home and garden products, and toys in a way that minimizes your child’s exposure to potentially toxic substances.

Filter your drinking water. Use bottled water only if tap water is known to be contaminated with substances or microbes that are not filtered out.

Avoid secondhand tobacco smoke in the home, car, restaurants, bars, stores, and other public places.

Avoid exposure to endocrine-disrupting chemicals and known or suspected carcinogens when planning to get pregnant and throughout pregnancy. This includes BPA, a known endocrine disruptor.

Properly get rid of household chemicals, paints, cleaning supplies and other materials.

Make informed decisions about products you purchase and use. Visit Household Products Database , a service of the National Institutes of Health, and the Environmental Working Group’s Health and Toxics Database . These resources offer an abundance of information to assist you to make healthier choices in your every day life.

When a job exposes you to chemicals, remove shoes before entering your house. Wash your work clothes separately from the family’s regular laundry to minimize kids’ exposure.

Check radon levels in the home. Radon is a naturally occurring, colorless, odorless gas that can accumulate in confined spaces, such as basements. Exposure to radon is the leading cause of lung cancer-related deaths in non-smokers.

Make certain your health care provider keeps accurate records of medical tests that may result in harmful exposures, such as radiation from x-rays or scans. If these records aren’t being kept, keep them yourself. With this information, you can make better decisions about the benefits and risks of medical tests.

Wear a headset when using a cell phone, text instead of calling, and keep calls brief.

Avoid ultraviolet light by applying sunscreen and proper sun-protective clothing. Never use tanning beds.

Conflict Dispute

Despite what appears a slam dunk on environmental hazards and cancer, this report is not without dispute. Michael Thun, MD, a respected physician and epidemiologist with the American Cancer Society points out that there is no doubt that environmental pollution is of profound importance to human health and the health of the planet. But he fears that the report may minimize the focus on other known, modifiable causes of cancer that currently offer the best opportunity for cancer prevention.2

The scientific evidence most solidly supports the major causes of cancer as being tobacco use, obesity, alcohol, infections, hormones, and sunlight. According to Thun, the report implies that pollutants are the major cause of cancer, but this is far from a settled issue.2

Go that one step further

The best approach is to hedge your bets in all areas of cancer and other disease prevention. It makes sense to take the precautions (detailed above) presented by the PCP. But it also makes a whole lot of sense to tackle the things we can control in our daily lives.

There is no doubt that obesity is a leading cause of cancer and other chronic diseases in this country. Make your body a priority and make sure you’re not among the two-thirds of Americans who are overweight and obese. Exercising regularly is another known cancer prevention technique, so lace up those sneakers and get moving. Always avoid tobacco in any form.

And don’t forget about food. Simply put, the right foods can be used to your advantage to “cancer-proof” and disease-proof your lifestyle. Plant foods are your ticket to detoxifying from a toxic lifestyle. By plant foods I mean the vegetables, fruit, whole grains, beans, peas, nuts and seeds free from toxins/pesticides. From antioxidants, vitamins, and minerals, to the nutrients known to aid with detoxification, plant foods are a must.

Wellness Challenges and What Do YOU Do About Them?

I have had and continue to have great experiences with wellness. Wellness is a passion of mine and I pursue it with great enthusiasm.

But I have to admit that there is so much we need to be aware of in order to gain overall wellness in body, mind and spirit. Awareness about positive thoughts vs negative thoughts are dynamite. It is an area that I must work and be more aware of on a daily basis. I was visiting my sister recently and she was so excited to tell me about a “water” analysis by an expert showing how “good” vs “bad” thoughts can change water dramatically and significantly. I had heard about this before and seen pictures but it was again amazing to be reminded that our bodies are made up of over 70% of water. Thus, “positive” thoughts can and do significantly change our bodies at the water levels. Whew…..what a dramatic and magnificent difference we can make to our WELLNESS at this level.

Another huge area in the body/mind/spirit realm is toxins in the forms of pollution, household chemical cleaners, pesticides, medicinal toxins from prescriptions, high metal toxicity, etc., etc. I firmly believe that we must be vigilant in this area and constantly help our body rid itself of these horrific toxins on a constant basis.
